Soya Chunks Curry

Soya chunk recipe is a spicy and nutritious curry prepared by cooking soya chunks with Indian spices. It is commonly served as main dish in India. Soya chunks is an excellent source of protein and has many other health benefits.

Ingredients:

2 Cups – Trs soya chunks
1 big Onion
2 cloves – Garlic
1 inch – Ginger
1 big Tomato
1-Green Chili
1- Kashmiri red chilli dried
1- Bay leaves
1/2 tsp – Cumin seed-
1/4 tsp – Mustard seed
1/4 tsp – Aniseed
1/6 tsp – Fenugreek seed
A pinch Hing (asafoetida)
1tsp – Tumeric powder-
1/2tsp – Pepper powder-
1/4tsp – Kashmiri chilli powder (as per taste)
1tsp – Cumin powder
1tsp – Coriander powder
1 1/2 tsp – Kitchen king
1/8 – tsp Garam masala
1/2 tsp – Salt  (as per taste)

Recipe:

1.Boil soya chunks in approximately 4 cups of salted water for 5 minutes or till they becomes double in volume. Squeeze soya chunks and remove excess water.

2.Heat the pan on medium high flame and add 1-1/2 tsp oil. Add squeezed soya chunks after 2 minutes and cook them until turned slightly brown (approximately 7 mins on low flame). Keep soya chunks aside in a plate.

3.Cut garlic, ginger, onion, tomato, green chilli into big pieces.

4.Heat 1 tsp oil in a pan and after 2-3 mins add red chilli,  wait till it becomes light brown. Add chopped garlic, ginger chopped onion and cook for 5-7 mins (untill golden brown) now add tomato and cook till it becomes mushy.

5.Switch off the flame and let it cool down. Blend the mixture to smooth paste and keep it aside.

6.Heat the oil in the pan for 3 minutes and add cumin, mustard, aniseed, fenugreek seed and bay leaves let them crackle.

7.Add paste of ginger, onion and tomato prepared in Step 5 and cook it 5 mins on low flame. Add all spices except garam masala mix it properly and cook it till oil comes out or become dry.

8.Add 2.5 cups of water and let it boil on high flame, add soya chunks.

 

9.After 5 mins add garam masala powder and cook it for another 10 mins or gravy becomes thick on low flame. Switch off the flame and garnish it with coriander leaves and green chilli.

Serve it with chapatti or fried rice!
