Aalo curry is commonly prepared during Indian festivals and is served with Puri and Halwa. It is a potato based based curry prepared by cooking boiled potatoes with Indian spices.
Ingredients:
Boiled potatoes- 8 medium size
Mashed potato- 1
Green chilli -1
Ginger – 1 inch
Coriander leaves – 5 sticks
For Seasoning
Oil – 2tbs
Cumin seed- 1 tsp
Mustard seed – 1/2 tsp
Bay leaf – 1
Dry red chilli – 1
Spices
Salt -1 1/2
Coriander powder – 1tsp
Cumin powder – 1 tsp
Haldi powder- 1tsp
Pepper powder- 1/2 tsp
Chilli powder- 1/2 tsp
Garam masala – 1/4 tsp
Recipe:
1 Add oil to a pan and heat it . Add seasoning and allow to crackle.
2 Add mashed potato and fry for 2 minutes on medium high flame.
3 Grind chopped tomato , ginger and green chilli and make fine paste. Add fine paste fry it for 3 minutes and add salt and spices.
4. Cook it for 10 minutes or oils begin to separate.
5 Add chopped potatoes and cook it for another 10 mins on low flame.
6 Add 1 cup water or just enough to make gravy. Cover it and cook for 5 mins and garnish with coriander leaves.
